1) Make sure not to over mix…mix the wet ingredients first and then add to the packaged mix and stir only enough to just moisten the dry ingredients. There may still be lumps remaining in the batter but that is okay. The more you mix, the tougher the cake will be.
2) For easier slicing and better flavor, cover and store cake overnight before serving.
3) Cakes freeze well. Just cool loaves completely…do not glaze. Wrap tightly in plastic wrap or bags (or wrap individual slices separately). For optimum flavor, use within one month. Allow to thaw.
4) Heat in a hot (450 degrees) oven about 5 minutes or in a microwave oven…wrap in a paper towel or napkin and heat for 5 to 10 seconds or longer if frozen, until just warmed through.
5) To eliminate any rims around the edges of the cake, just grease the baking pans on the bottom and only ½” up the sides.
